Feta Cheese Salad Bowl


Ingredients: Salad

  • Spinach (handful)

  • Rocket (handful)

  • Cucumber (half)

  • 2 Peppers

  • 1 tin of chickpea

  • Cherry Tomatoes (handful)

  • 1 chopped apple

  • Pomegranate seeds

  • 100g of feta cheese


Ingredients: Dressing

  • 50g of wholegrain mustard

  • 1 tbsp. (20g) of honey

  • 20ml of olive oil




Method:

  • Chop the feta cheese into cubes.

  • Chop the peppers into thin slices.

  • Chop the apple into small cubes.

  • Place all the ingredients in a large bowl and mix together.

  • Salad makes 4 portions.

  • To make the dressing, mix the mustard, honey and olive oil in a small bowl and stir thoroughly.

  • Use the dressing sparingly - it should make enough for four portions.
