Plum and Raspberry Crumble


Ingredients - Base:

  • 10 - 12 plums

  • 100g raspberries

  • 1 tbsp. of honey (20g)

  • Dash of cinnamon

  • Small splash of apple juice (20ml)

  • 100ml of water



Ingredients - Crumble Topping:

  • 200g oats

  • 100g of ground almonds

  • 50g of flaked almonds

  • 20g of pure butter

  • Dash of vanilla essence (10ml)

  • 1 tbsp. of honey (20g)

  • 1 egg




Method:

  • Put all of the base ingredients in a large pot and cook at medium heat for 10-20 minutes.

  • Put the oats, ground almonds and flaked almonds in a large bowl and stir together.

  • Melt the butter on a hot pan and, once melted, add it to the crumble mixture. Stir the mixture until it starts to bind together slightly and the texture becomes a little 'sticky'.

  • Add the egg to the mixture and stir until the mixture binds even more.

  • Add honey and vanilla essence to the crumble mixture and stir together to increase the bind of the mixture.

  • Place the cooked base mixture into the bottom of a baking dish and spread thoroughly. Place the crumble mixture on top and spread until the base is covered.

  • Bake in the oven at 180 degrees for 30 minutes.

  • Serve with vanilla flavoured yogurt.
