Plum and Raspberry Crumble
Ingredients - Base:
10 - 12 plums
100g raspberries
1 tbsp. of honey (20g)
Dash of cinnamon
Small splash of apple juice (20ml)
100ml of water
Ingredients - Crumble Topping:
200g oats
100g of ground almonds
50g of flaked almonds
20g of pure butter
Dash of vanilla essence (10ml)
1 tbsp. of honey (20g)
1 egg
Method:
Put all of the base ingredients in a large pot and cook at medium heat for 10-20 minutes.
Put the oats, ground almonds and flaked almonds in a large bowl and stir together.
Melt the butter on a hot pan and, once melted, add it to the crumble mixture. Stir the mixture until it starts to bind together slightly and the texture becomes a little 'sticky'.
Add the egg to the mixture and stir until the mixture binds even more.
Add honey and vanilla essence to the crumble mixture and stir together to increase the bind of the mixture.
Place the cooked base mixture into the bottom of a baking dish and spread thoroughly. Place the crumble mixture on top and spread until the base is covered.
Bake in the oven at 180 degrees for 30 minutes.
Serve with vanilla flavoured yogurt.
