High-Protein Vegetable Omelette
Low calorie cooking spray
3 whole eggs
2 egg whites
Peppers (2-3 colours)
Cherry tomatoes (handful)
30g parmigiana cheese
Apply a low-calorie cooking spray to a hot pan.
Whisk the eggs, egg whites, 100ml water, salt and pepper in a bowl.
Fry the chickpeas for approximately five minutes.
Add peppers, tomatoes, kale, spinach and rocket to the pan and fry for approximately five minutes.
Add the egg mixture to the pan and cook for several minutes until the eggs are set.
Add cheese on top before flipping or folding the omelette.
Cook under a fan oven on low heat for several minutes.
Mixture makes enough for two small servings or one large serving.
