Three-Bean Curry


Ingredients:

  • 1 tin of chickpeas

  • 1 tin of kidney beans

  • 1 tin of cannellini beans

  • 1 tin of chopped tomatoes

  • 1 tsp of mango chutney

  • 1 tsp of turmeric

  • 2 tsp of curry powder

  • Dash of black pepper

  • Dash of sea salt

  • 500ml of water

  • 1 cooking apple

  • Wholegrain rice


Method:

  • Heat the chopped tomatoes in a saucepan on low heat for approximately 5 minutes.

  • Add the turmeric, curry powder and mango chutney to the chopped tomatoes.

  • Drain the kidney beans, cannellini beans and chickpeas before adding to the saucepan.

  • Chop the cooking apple and add to the saucepan.

  • Add salt and pepper.

  • Cook on medium heat for approximately 10 minutes.

  • Recipe makes enough for 5 portions.

  • Serve with wholegrain rice.
