1 tin of chickpeas
1 tin of kidney beans
1 tin of cannellini beans
1 tin of chopped tomatoes
1 tsp of mango chutney
1 tsp of turmeric
2 tsp of curry powder
Dash of black pepper
Dash of sea salt
500ml of water
1 cooking apple
Heat the chopped tomatoes in a saucepan on low heat for approximately 5 minutes.
Add the turmeric, curry powder and mango chutney to the chopped tomatoes.
Drain the kidney beans, cannellini beans and chickpeas before adding to the saucepan.
Chop the cooking apple and add to the saucepan.
Add salt and pepper.
Cook on medium heat for approximately 10 minutes.
Recipe makes enough for 5 portions.
Serve with wholegrain rice.
